One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

A discreet dollop of wood sets off the ever-so-mildly exotic aromas of white and yellow peach, passion fruit and subtle mineral reduction wisps. There isn’t the same weight and density though there is much better refinement to the lightly stony, focused and sneaky long finish. Bursting from the glass with aromas of vine blossom, orange zest, crisp white peach and honeycomb, the 2020 Chablis Grand Cru Vaudésir is medium to full-bodied, satiny and enveloping, with a seamless, elegantly fleshy profile and lively balancing acids. As is often the case, it’s one of the more demonstrative grand cru bottlings in the range, yet its track record for longevity is impressive.
