One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

Aromas of quinine, essence of wet stone and seashore add breadth to the nose of pear, apple and anise. Once again there is fine density and intensity to the mouth coating medium weight flavors that flash outstanding length on the bracingly saline suffused finale. This has already develop very good depth and more will also surely develop. This is potentially outstanding. The 2020 Chablis Grand Cru Les Preuses is, if anything, even more electric than the formidable Valmur, wafting from the glass with notions of citrus oil, freshly baked bread, oyster jus and wet stones. Full-bodied, satiny and chiseled, it’s racy and intense, with a bright spine of acidity and a long, intensely saline finish.
