One of the greatest domaines in Chablis founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
The 2018 Chablis Grand Cru Les Preuses is another beautiful wine from Fèvre, wafting from the glass with pretty aromas of orange blossom, oyster shells, citrus zest and fresh pear. Medium to full-bodied, satiny and incisive, it's ample but precise, with racy acids and an intensely saline, mineral finish. As is usually the case, this is one of the most elegant wines in the range with its cool, airy and admirably pure aromas of citrus zest, oyster shell, seashore and all but invisible wood nuances. The mouthfeel of the medium-bodied flavors combines volume with refinement while delivering excellent length on the balanced, stony and markedly dry finale. This is not quite as concentrated as it usually is and it does need to develop more depth but overall, it's a potentially marvelous wine of refinement and grace.
