The Crayères vineyard is located at the top of a north-south limestone ridge in Wrattonbully, one of Australia’s most exciting regions. This vineyard has been baptised the Crayères Vineyard after the chalk cellars in Xavier’s region of birth in Champagne, France because of the natural limestone caves found underneath the vineyard.
Deep crimson red. Classically styled ageworthy Cabernet Shiraz with blackberry, chocolate, cedar with dried herbs, spice and roasted chestnut. Powerful blackcurrant, dark cherry, old leather complexity, boosted by a dense tannin frame. Excellent length, persistence, and shape to finish so should develop very well. Intensity of flavour is very good, but it's the tannin and the associated length that really sets it apart. Blue, black and red-berried fruits, pencil shavings, gum leaf and cocoa notes push persuasively through the palate, rolls of tannin then pressing from the back palate on. This wine really does lay down the law. The fruit is fresh but bold, the texture is dry but soft, the finish is juicy but chained with tannin. Cedar, dust, juicy red-and-black berries, a long, floral, complex conclusion; it’s a gorgeous flavour profile. Gum leaf notes are evident too – in an integrated, harmonious way. This smells seriously deep and seriously interesting. The palate is also a blast: really deep, dark edgy, damson plummy spicy, - which is the Shiraz influence I reckon. Excellent fruit density on the palate - mulberry/damson at the core - and the tannins - melty, yet suede textured too — are immaculately structured. Has some style this. Definite lift in Cabernet aromas with black olive and cassis. Full bodied with a sense of history, as if the old earth it has grown in extends through the serene, immovable nature of the palate. Plentiful and grounded tight and fine tannins. Savoury dark cassis fruit that maintains life with those herbal, eucy and minty echoes. A decade of opportunity awaits. The detail and shape are all class – it’s an excellent wine hands down. Consuming every crevice of the mouth, cedar and caramel walk side by side through an expanse of dried herbs and savoury feels. Thyme and sage, shards of chocolate plus some hints of vanilla too. Brick dust tannins swarm on close and refuse to leave. Big love and highly recommended. Drink to ten years+.
