The most sublime and the most celebrated estate of Chablis, the wines of Domaine Raveneau are a rare find—exceptional because the vineyard holdings are almost entirely made of grand cru and premier cru fruit, painfully finite as so few are produced, outstanding because of their tremendous quality and consistency, and unusual given the modesty of the vignerons who create these world-class wines.
A discreet application of wood sets off ever-so-mildly exotic aromas of passion fruit, lemon-lime, white peach and quinine. The equally delicious medium-bodied flavors are more refined if not as concentrated while exhibiting strikingly good length on the saline and palate staining finish. This is also very promising. The 2020 Chablis 1er Cru Vaillons wafts from the glass with aromas of pear, green apple, white flowers, freshly baked bread and wet stones. Medium to full-bodied, satiny and elegant, it's suave and seamless, with lively acids, chalky grip and a long, saline finish.
