With offices located in the birthplace of Chablis: a ninth to sixteenth century listed monastery called l’Obédiencerie, where monks made the first Chablis.
Cool, high-altitude climates suited to Chardonnay in the Limoux sector. Age of the vines: 30 years minimum. A mosaic of predominantly clay and limestone soils with a remarkable raw material.
