Domaine Dujac in Burgundy was acquired by Jacques Seysses in 1967. The domaine in Morey-St-Denis had 4 hectares of vineyards and he has subsequently built it up to 11.5 hectares. Domaine Dujac now includes holdings in Clos de la Roche, Clos St-Denis, Bonnes-Mares, Echézeaux and Charmes-Chambertin . "Use knowledge and technology to counter accidents - for example, bad weather - but, if all is going well, don't interfere," says Seysses and this principle guides much of what happens in the vineyards and the cellars. Dujac wines are neither filtered nor fined and all of his premiers and grands crus are aged in 100% new oak. These are wines of the very highest order.
A surprisingly open and expressive nose freely reveals its aromas of wild red berries, anise, clove, rose petal and crushed herb. The intense, serious, muscular and precise big-bodied flavors deliver equally good persistence if not quite the same complexity, at least not yet. However, given that this is even more firmly structured, it should enjoy an exceptionally long aging curve and thus much more depth will almost surely develop. We will in time see. Outer quote mark After fermenting as whole clusters and ageing in 70% new casks, the wine has an exotic perfume, with a pronounced pomegranate and black cherry fruit, hints of anise, liquorice, mineral and a savoury, smoky edge. It is tannic and firm, dense with extract, and very long on the finish. Superb. Dujac now farms more than a half-hectare of Bonnes-Mares, including the historical parcels of the domaine on the terres rouges (red clay) soils at the bottom of the slope, as well as the terres blanches acquired further upslope due to the Moillard transaction.
