The land was first purchased by Karl Cimicky in the early 1970’s. Karl vision for the land was to establish a world renowned Barossan winery. Charles Cimicky, after having learned the trade took over the business from his father and subsequently changed the name from KARLSBERG WINES to K. CIMICKY and SON and later to CHARLES CIMICKY.

The 2021 Cimicky Cellar Selection embodies the classic fruit-driven style of Barossa Shiraz. Deep red with a hint of crimson, its aromatic profile showcases lifted ground spice, prunes, plum, leather, and chocolate. The palate is rich and succulent, crafted from carefully selected barrels with excellent aging potential. Matured for 26 months in oak, it develops layers of roasted nuts, vanilla, and smooth, sweet tannins. An additional 12 months of bottle aging enhances its softness and complexity. Enjoy now or cellar for up to eight years under cool conditions.

A thoroughly beautiful Barossa shiraz based on the old Barossa but with a modern tweak of refinement. It was a super year, reflected in the dark fruits' depth and balance. Plummy dark chocolate, lightly roasted coffee beans and a little vanilla oak are all true to the regional DNA. The depth and concentration of the fruit sit well with the 26 months in oak. From a stellar Barossa vintage, the team have moved to screw cap here. The wine spent eighteen to twenty-six months maturing in oak barrels. We have aromas moving through spicy notes, chocolate, mocha, cloves, cold tea, blueberries, coffee beans and aniseed. The oak is well handled and the wine has some serious concentration – coiled power just waiting to unleash itself over the coming years. Finely balanced, it finishes with satiny tannins and excellent persistence. It sits nicely alongside the 2020 at the moment, but it has even more potential.
