This is a super impressive Yarra Valley Cabernet. The intensity of the blackcurrant and plush dark plum is immediate whilst notes of herbs and even a little black pepper reveal themselves. Typically structured with firm tannins and a liberal hit of oak. It’s focused and very long with the characters that should support extended cellaring. When Yarra Valley cabernet is good it’s a thing of absolute beauty and this cabernet from Hirsch Hill is good. It tastes of blackcurrant, black olives, bay leaves and smoked cedar but it’s the velvety glide of it, the medium-bodied elegance and the way it swings so confidently and with such ease through the finish that really marks its quality.
